This is beautifully designed tequila from the owner of Yéyo Jon and Morgan Bullinger and Master Distiller Sergio Cruz created at the Vivanco family distillery NOM 1414 in Arandas, Jalisco.
Sergio Cruz, well known for his willingness to experiment, has partnered with Jon and Morgan to created this unusual reposado rosa expression.
This tequila is exceptionally crafted: cooked in stone brick ovens, with open air fermentation while classical music is being played in the fermentation area to stimulate the yeast.
This tequila is then barreled in three different barrels. One-third of the batch is each placed in barrels previously used for French Syrah, Spanish Sherry, and Portuguese Port. After resting for eight months, all three were then blended together for a unique experience at 86 Proof.
A higher proof can lessen the aromas (depending on how high the ABV) but I am not experiencing that here with this 43% ABV tequila. I am getting cooked agave, raisin, plumb, baking spices, dried cherry, oak, and honey.
On the palate I am experiencing cooked agave, plumb, baking spices, cinnamon, oak and dried cherries.
The finish initially presents as short to medium, but then the port barrel note continues to linger on the palate for quite a while
Yéyo hit a home run here and this is a high proof rosa tequila that I am willing to drink repeatedly and happily.
