Are you looking for a small-batch craft tequila? Look no further.
Viamundi, meaning “journey of the world,” reflects the brand’s focus. It produces various small-batch agave spirits from different places of origin.
Viamundi Spirits was co-founded by industry veterans Adam Castelsky and David Weissman. Besides their blanco tequila, their lineup also includes mezcal, sotol, raicilla, charanda and a Mexican rum!
Viamundi harvests agaves grown in the mineral-rich soils of Los Altos at 7,000 feet above sea level. This is all about climate and terroir.
The agaves are slow-cooked in a stone-brick oven, crushed in a roller mill, open-air fermented to classical music using “The Mozart Effect,” distilled in copper pot stills, and bottled at 43% ABV (86 proof).
Master distiller Enrique “Balta” Baltazar, a former chemist, says the music fills the air as the spirits come to life in open stainless steel vats. Playing music can help soften the resulting spirit and bring out more flavors, according to those who use this method.
When asked about offering aged expressions, Balta simply smiles – his crystalline blanco needs no golden disguise.
The Haciendo El Olvido distillery now operating under NOM 1580 previously operated under NOM 1079 with different ownership. It was there that some of the most amazing old-school tequilas were produced, including Oro Azul and ArteNOM 1079. Other notable brands currently produced here include Tierra de Ensueño and Acre Largo.
Aroma: Light cooked agave, plenty of minerality and citrus, along with a slight tropical note.
Flavor: Clean cooked agave, citrus, anise, sweetness, cinnamon and light pepper notes.
Finish: Medium, clean and crisp.
If you’re looking for a small-batch craft tequila, Viamundi is an excellent choice: a vibrant, clean, crisp Highlands-style blanco with agave sweetness.
As Balta likes to say, “Siempre hay tiempo de disfrutar un buen tequila”: there is always time to enjoy a good tequila!
