Some tequilas are defined by where they come from. Tierra Noble is defined by what its founders chose to learn from that place.
High in the Sierra del Tigre near Mazamitla, Alberto Herrera and his brother Octavio built La Estacada, one of the highest tequila distilleries in the world.
At more than 7,200 feet above sea level, cooler mountain temperatures naturally slow fermentation, aging, and nearly every stage of production. Rather than viewing those conditions as obstacles, Alberto—owner, maestro tequilero, and civil engineer—designed Tierra Noble around them.
That philosophy extends well beyond altitude. Herrera has often described his approach as respecting traditional tequila making while strengthening it through thoughtful innovation. Instead of replacing craftsmanship with technology, he uses technology to better express the qualities that nature already provides.
Produced at Premium de Jalisco (NOM 1558), Tierra Noble carries that philosophy through every stage of production.
Blue Weber agaves are sourced from both Los Altos and the Valley of Tequila, reflecting Alberto Herrera’s belief that exceptional tequila can express the strengths of both of Jalisco’s principal agave-growing regions rather than choosing between them.
At La Estacada, the cool mountain climate allows fermentation to proceed slowly, followed by a rare secondary malolactic fermentation that adds another layer of complexity before distillation.
Even barrel maturation unfolds at the mountain’s pace, allowing time to shape the spirit. Every decision reflects patience rather than urgency. The mountain cannot be hurried, and neither can the tequila made upon it.
By allowing climate, altitude, and time to become collaborators rather than variables to overcome, Tierra Noble reminds us that good tequila is not always the result of controlling nature. Sometimes it is the reward for learning to work in harmony with it.
Nose: cooked agave / hint of vanilla / wet grass / hint of pear / grapefruit / anise / hay / spearmint
Taste: sweet cooked agave / hint of vanilla / mild cinnamon / black pepper / apple / grapefruit / anise / spearmint / orange blossom / very light hint of baking spices
Finish: light viscosity is a touch watery but delivers a decent coating of the palate / the cooked agave and mild cinnamon are the first to deliver, with only the faintest pepper note at the back end / some bitterness comes up on some sips but it’s mild / a touch of anise pops in on the final swallow / gentle overall finish
