TAU represents the Sun God and is inspired by the beliefs of the Wixárika (Huichol) Indigenous people of Mexico.
The TAU Tequila brand is owned by the López Herrera family, originally from Jesús María, Jalisco. Martín López Herrera, his wife, and their four children launched TAU in 2019.
Martín has been part of the tequila industry since 2007. He is a certified taster with the Secretaría de Educación Pública. Along with the distillery team at NOM 1414, Martín oversees the aging and bottling of every batch of TAU Tequila.
TAU High Proof Extra Añejo is produced with agave from Arandas. It is cooked in stone/brick ovens, roller-mill crushed, fermented in open-air stainless-steel tanks with Champagne yeast, and distilled in copper pots.
This extra añejo tequila was aged for 57 months—just under five years—in a combination of American and French oak barrels: 33% American oak ex-tequila barrels, 33% French oak ex-tequila barrels, and 33% French oak ex-wine barrels.
The tequila is bottled at cask strength, 47.7% ABV.
Nose: Caramel, barrel spice, cloves, vanilla, orange peel, berries, honey, and chocolate.
Palate: Barrel spice, sweet cooked agave, honey, caramel, vanilla, chocolate, and orange peel.
Finish: Spicy and sweet, with a nice mouthfeel that fades to a dry oakiness and lingering warmth.
I am really enjoying this expression. It is easy to sip, keeps evolving as it opens, and makes me want to go back for more. I normally drink blancos, but this extra añejo is special.
