Siembra Valles Ancestral is one of the most ambitious efforts to reconnect tequila with its historical roots.

Conceived by David Suro of Siembra Spirits and brought to life alongside Salvador “Chava” Rosales and the Rosales family of Cascahuín, this limited-production tequila revives production methods that predate modern industrial tequila.

Roasted in earthen-pit ovens, hand-macerated with wooden mallets, fermented with fibers, and distilled using traditional wooden Filipino-style stills, Ancestral challenges conventional expectations of what tequila can be.

The result is not simply a spirit, but a living expression of heritage, craftsmanship, and cultural preservation. By embracing techniques largely abandoned over a century ago, Siembra Valles Ancestral offers a rare glimpse into tequila’s past while demonstrating that tradition still has a place in the future of agave spirits.

Nose: Sweet roasted agave, wet wood, smoke, clay, soil, cement, grass, citrus, honey, mint, herbs, and pepper.

Taste: Roasted charred agave, pepper, clay soil, post-fire smoke, vegetal garden, lime zest, earth, grass, hay, honeycomb, spearmint, and fresh herbs.

Very pleasant mouthfeel with nice viscosity and fading notes of pepper, iodine, grapefruit, and charred wood.
