Let me start where I always start: the NOM. Señorita Mexicana is produced at Inulina y Miel de Agave (NOM 1605), known as “El Llano,” in Capilla de Guadalupe. This is one of the oldest distilleries still operating in the Highlands of Jalisco.
That alone earns a second look.
In a market flooded with brands chasing the same handful of high-volume NOMs, landing at a storied, family-run facility with deep regional roots is a meaningful production choice, not just a marketing one.
The master tequilero behind the liquid is Karina Franco Gutiérrez.
Nose: The Highland agave announces itself with light, sweet cooked agave up front. The aroma is thin, with lemon, lime, anise, floral, and earthiness.
Palate: An easy-sipping entry with a slight sweetness. You still get light cooked agave, cinnamon, anise, floral notes, lime, wet cement, stone, and earthiness.
My honest take is that it’s an interesting profile that needs further exploration, though I wish there were more agave influence behind it.
