Some tequilas are made for taking shots. Others are crafted to tell a story, and Prolijo Blanco is definitely the latter.
Bottled at 43% ABV (86 proof), this blanco is built around traditional production, terroir, and letting the agave speak for itself.
The name Prolijo means “to pay attention to detail,” which fits what they’re doing here.
Made from 100% Blue Weber agave grown in Santa María del Oro, Nayarit, Prolijo highlights the region’s volcanic soil and local growing conditions as influences on the spirit’s character. Its use of Nayarit-grown agave rather than Jalisco-grown agave is part of what sets it apart.
Agave production is overseen by Miguel Rios, with distillation led by Ricardo Rodríguez.
Production is where this tequila really caught my attention.
The agaves are slowly cooked in a traditional stone oven, then crushed using a volcanic-stone tahona wheel. Fermentation takes place in open-air tanks using natural yeast, before the tequila is distilled twice in a stainless-steel pot still with a copper coil.
Rather than bottling at the standard 40% ABV, they bottle Prolijo Blanco at 43% ABV, giving it a little more intensity.
On the nose, I immediately get fresh and cooked agave, citrus, white pepper, vegetal notes, and an earthy minerality. It’s clean and vibrant, with the cooked agave and pepper really jumping out of the glass.
The palate is where this gets even better. There’s a silky mouthfeel, with cooked agave leading the way, followed by lime peel, soft herbs, and a really pleasant natural sweetness. The extra proof starts to show as the pepper builds through the middle of the palate.
But my favorite part is the finish. The pepper and minerality linger before transitioning into this surprisingly clean, almost minty freshness with a subtle floral note. It leaves my palate refreshed and immediately makes me want another sip.
This is exactly what I want from a well-made blanco: an agave-first profile, traditional production, plenty of character, and enough proof to bring everything forward without getting in the way.
Prolijo Blanco is absolutely worth exploring if you appreciate traditionally produced, agave-forward tequila. It delivers beautiful cooked agave, pepper, minerality, natural sweetness, and one of the cleanest, freshest finishes I’ve had in a while. Salud!
