Pezuña Blanca offers a certified organic line of tequila distilled at Tequila Las Americas (NOM 1480) in Amatitán, Jalisco.
The bottles are certainly unique in shape and material.
Their shape is intended to resemble an equestrian form; think of a horse’s calf. They are handmade ceramic vessels with a nice tactile feel and a metal topper.
Agave is sourced from the Amatitán region in the Tequila Valley, then cooked for 40–45 hours in hornos and milled with a roller mill.
Fermentation is done in open stainless-steel vats, allowing local natural yeasts to do their magic, before distillation in stainless-steel stills with copper coils.
The añejo is aged for 15 to 18 months in ex-bourbon barrels.
On the nose, I get a vegetal pepper aroma with dry oak barrel spices and wood tannins. It’s earthy and vegetal.
I taste earthy cooked agave and the dry barrel spices. The agave tastes caramelized, and the barrel spices are dry and earthy. The finish has some sweetness, and the barrel spices come in dry with a touch of bitterness.
Overall, the agave sweetness brings a caramel note. The agave is earthy, and the barrels are spicy. The wood tannins are dry. This makes for a caramel, earthy, and spicy añejo.
