This Symphony Series consists of two releases a year, Romer.
Symphony Series No. 3 Añejo is a unique exercise, tying in the interaction between the terroir of the agaves and its relationship to wood. Custom hybrid barrels are made up of American oak wood staves from four different states (Minnesota, Missouri, Pennsylvania, & Virginia). This Añejo is rested for 18 months.
Aromas: Roasted agave, vanilla, caramel, barrel notes definitely come through on the nose, baking spice, along with some fruity notes.
Flavor Profile: for me the wood notes dominate, followed by vanilla and caramel sweetness. Some burnt orange notes. The agave notes show over the tannins on the finish.
Finish: Medium finish, light bitter notes, with some sweetness on the palate coming through towards the end.
The complexity of the barrels creates something unique and special. This tequila definitely evolves in these barrels.
Ana Maria Romero pushes the boundaries here, and is redefining what tequila can be.
