Produced in Los Altos de Jalisco (the Highlands) at Hacienda Capellania, this blanco tequila leans less artisanal and more toward modern production methods, but with some intriguing details.
Agaves are cooked in high-pressure autoclaves, extracted via roller mill, fermented in open-air stainless steel tanks with ambient yeast, and distilled in stainless steel with copper coils. It is unusual for a volume tequila to use ambient yeast due to the flavor variety that is a hallmark of using non-consistent yeast strains.
What stands out is the setting where this is made. The distillery is surrounded by fruit orchards, and the open-air fermentation pulls in wild yeast from that environment, contributing to the tequila’s aromatic profile.
Nose: Cooked agave leads, followed by anise, green pepper, mint, and a light floral note.
Taste: Cooked agave and anise carry through, with floral and green pepper notes.
Finish: Green pepper lingers alongside a dried fruit note.
