Destilería El Bagazo (NOM 1677) is a Casa Endémica project led by Esteban Morales, the 18-year industry veteran behind La Venenosa raicilla.
The brand-new Bagazo distillery is a very unique stand-alone facility located near the western Jalisco town of Mascota, far from the Tequila Valley or the Highlands.
They are creating renewable energy by using the bagazo (leftover cooked agave fibers) as fuel for cooking the agaves and for powering the entire distillery. Their tahona is solar-powered! The bottles are all recycled glass, and their labels are made with bagazo fibers, along with the caps which use 30% bagazo.
This review is for their very first Lot 1 blanco.
Aromas: Roasted agave, light smoke, herbal notes.
Flavors: Sweet cooked agave, a light smoky note, herbal, sage, mint, anisette, and black pepper. A very nice mouthfeel.
Finish: Clean, crisp, and balanced, leaning more toward a savory note.
El Bagazo tequila is a true artisanal brand, unique in that every batch is about developing a certain flavor profile rather than its ABV. Due to CRT labeling laws, every bottle has a QR code for more in-depth information. Current releases are Lot 1 Blanco and Reposado, both at 42 ABV, along with Blanco Único, a unique batch at 49.2 ABV.
