This small distillery in Los Altos features consistent expressions, agave from Guanajuato, and a variety of philosophers on their labels. (El Ateo means “The Atheist” in English).
The nose on this still strength “Big Bang” blanco is strong, belying it’s 50% ABV. It's a nice mixture of green vegetal agave and cooked agave. There are some earthy notes, minerality, and some underlying citrus rind. Some faint white pepper and sweet alcohol vapors appear.
I taste vegetal and buttery agave, white pepper, and alcohol, along with all of the sweetness that comes from mature baked agaves. The mouthfeel is nice and round. It’s viscous and buttery. The pepper and sweetness kick in and both carry into the finish. The proof helps to deliver these full flavors.
This is a full-flavored blanco, but it’s not overwhelming or overpowering. It’s an excellent full-flavored high-proof blanco.
