Dos Ángeles Caídos owner and chemist Yahaira Nunez has teamed up with distillery Hacienda de Oro (NOM 1522) and master distiller Jimmy Sauza to create a unique tequila born of the Rioja or Ribera del Duero regions of Spain.
This rosa reposado is first aged in American white oak bourbon barrels, then finished in French oak barrels previously holding Tempranillo wine. Post-barreling the tequila is chill-filtered.
It needs time to open, much like a fine wine. Pour it and let it sit for 10 to 15 minutes; a little patience is required, but it pays off in flavor.
Once it opens up, this tequila comes to the table with expressive aromas of cooked agave, stone fruit such as dried cherries and plums, barrel spice, alcohol, and red wine, along with lighter notes of earthiness and cinnamon.
On the palate, you get several of the same elements: dried cherry, plum, barrel spice, and wine influence, along with notes of raisin, caramel, and oak.
It has a nice medium-length finish, with plenty of wine, pepper, and alcohol on the back of the throat.
