Every tequila begins with agave, but the best ones begin with an idea.
For Diana Inurreta, founder of Como Agua Tequila, that idea was inspired by her life experiences growing up in Jalisco, where childhood visits to local distilleries sparked a fascination with the craftsmanship, traditions, and artistry behind Mexico’s signature spirit.
Though her family was not part of the tequila industry, those early experiences eventually inspired her to create a brand of her own.
Produced at Tequilera Puerta de Hierro (NOM 1477) under the guidance of Maestro Tequilero Alberto Partida, Como Agua was never meant to be just another tequila. Diana was motivated by a simple observation: many people believed they didn't like tequila because their experiences with the spirit were harsh or unpleasant. She believed traditionally crafted tequila could tell a different story—one defined by balance, elegance, and authenticity.
The name Como Agua captures that vision perfectly. In Mexico, the expression is often used to describe a drink so smooth and enjoyable it seems to go down “like water.” For Diana, it represents the tequila she set out to create—refined, approachable, and true to its heritage.
Made from agaves grown in the Valles region surrounding El Arenal and Amatitán, Como Agua reflects the character of the land from which it comes while honoring traditional production methods.
Under Alberto Partida’s stewardship, Diana’s vision has become a tequila that respects its roots while inviting a new generation of drinkers to discover what thoughtfully crafted tequila can truly be.
Nose: earth / herbal / mineral / dried fruit / hint of grapefruit / cocoa / bell pepper / basil / hay / salt
Taste: sweet cooked agave / cinnamon / vanilla / banana / hint of melon / hint of cocoa (chocolate) / black pepper / lime / anise / black tea / baking spices
Finish: medium viscosity coats the palate well / the herbal flavors bring up cocoa (chocolate) notes that work deliciously with the black pepper flavor / the cooked agave and hints of melon and banana round out the heavy pepper notes and bring a great balance to the sip / the overall finish is very smooth and indeed drinks like water
Ultimately, Diana Inurreta isn’t trying to convince people to like tequila. She’s simply giving them the opportunity to experience good tequila that they can genuinely enjoy drinking.
