C.O. Jones tequila is the result of a genuine, long-standing passion for tequila and a desire to share that passion with others.

The journey began in 1999, when Bob Potter opened a tequila bar at a time when tequila represented only a small part of the U.S. spirits market. The goal was never simply to sell tequila, but to educate people about the spirit and give them an opportunity to discover quality brands they might never have encountered otherwise.

When the opportunity came to create their own tequila, Bob Potter and Cecilia Shae chose to take a decidedly hands-on approach.

Rather than relying on a middleman or broker, the two made numerous trips to Mexico themselves, visiting with different distilleries, learning from the people involved, experiencing the culture, and developing relationships along the way.

Their involvement extended from those first conversations through the many decisions that ultimately shaped the finished tequila. For Bob and Cecilia, creating a tequila was not simply about putting their name on a bottle. It was an opportunity to combine more than two decades of genuine interest in tequila with a personal commitment to being involved in the process from beginning to end.

C.O. Jones tequila represents that journey—a passion that began in 1999, evolved through years of learning and exploration, and ultimately culminated in a tequila of their own.

The blanco offers aromas of sweet agave, bright lime, minerals and straw. But there is a nice complexity beyond the initial aromas. Freshly ground cinnamon, hibiscus, kiwi, walnut, anise, white pepper, green olive and a hint of vanilla bean round out the aromas on this.

That sweet agave shows up immediately when it first hits the tongue. Then comes a nice forward presentation of honey, ginger, fresh lime, chalk and black pepper, all complemented by salted butter, peppermint, red apple peel and a nice floral note.

The mouthfeel is great—almost creamy. The complexity continues during the finish with notes of cinnamon, pepper and agave.

C.O. Jones is a very nice, complex blanco that is amazingly balanced and vibrant. Beginners and experienced tequila drinkers alike could enjoy it. The worst part is I had to finish my bottle for this review!
