Jesus Alderete moved from Jalisco, Mexico, to California more than 75 years ago, where he focused on farming and cultivation.
He brings that focus back to Jalisco, where their family-owned tequila is produced in Arandas in The Highlands at NOM 1414, Feliciano Vivanco y Asociados. The Vivancos have been cultivating blue weber agave for three generations.
Alderete is produced with estate-owned agaves and cooked in masonry ovens before being macerated by a roller mill. Fermentation occurs in stainless steel tanks using the Mozart method (classical music played to stimulate the yeast) before being twice distilled in copper pot stills.
This blanco has a clean and fresh nose.
There are aromas of citrus zest, sweet cooked agave, white pepper, and a fresh vegetal note akin to celery and parsley. The cooked agave is up front, which is common among tequilas produced at NOM 1414.
The cooked agave provides a nice natural sweetness. There’s some citrus that provides a zesty quality, and then the white pepper appears.
The finish is sweet cooked agave and muted peppers.
Overall, this blanco is very clean and balanced. It’s easy to sip but still has some excellent flavors.
