This Cascahuin Extra Añejo is one of the best XAs, if not the best, coming in at 86 proof. The sweet cooked agave notes shine at its slightly elevated ABV. Absolutely delicious. Chava and his team definitely know what they are doing. Barrel-rested for 4 years in used American White Oak Bourbon barrels, this Extra Añejo is a benchmark. It has a light golden appearance.
Aromas: The nose is amazing. Sweet cooked agave, barrel spices, dried fruit, raisin, orange peel, caramel, & vanilla.
Flavor Profile: The flavor profile is complex, featuring sweet cooked agave with a buttery mouthfeel, light black pepper, and citrus notes. Cooking spices come forward, followed by cinnamon, butterscotch, vanilla, and caramel. Dried fruit is present, lingering on the tongue. The agave and wood come together beautifully.
Finish: A medium to long finish, where the sweet cooked agave rests and harmonizes with all the other flavor notes. It is very well balanced.
