Cambio blanco tequila is a high-proof tahona and wood fermentation tequila that stands out for its bold character and innovative production methods. Brand owner Chef John Des Rosiers ensures that this tequila goes back to the traditional methods from 500 years ago.
Fermentation is slow at two weeks at a very low 20 degrees celsius, followed by the second stage being three days in wood tanks. This is a snail’s pace fermentation, which adds complexity to the finished product.
Nose: The aroma is vibrant with notes of cooked agave, vegetal, earthiness, minerality, lime and fruitiness.
Palate: Immediately on the palate you get cooked agave forward, mintiness, vanilla, cinnamon, citrus.
Finish: On the finish you get a lactic style profile. That “cheesiness” isn’t adored by all, but if you like a bit of the funk, this is a standout bottle.
