Production utilizes artisanal methods: brick oven cooking, open-air wood fermentation with wild yeast, and a second distillation in a full copper still. The reposado is aged for just over two months in well-seasoned ex-American whiskey barrels, ensuring the agave profile remains the focus, and not overly influenced by oak.
Nose: Fruit (plum, cherries), flowers, cooked agave, light oak, and cinnamon.
Taste: Cooked agave is dominant, with notes of fruit and pepper. There is mild oak, along with cinnamon and warming spices.
Finish: Persistent agave, light oak, and spices, closing with a faint hint of caramel.
This is a fair price for a quality reposado. While some drinkers may be surprised by the agave-forward nature and neutral barrel influence, this brand excels at showcasing its agave and terroir.
