After distillation, the tequila rested in stainless steel tanks for two years. According to the founder, Ernesto Aguirre, he wasn’t quite sure what he wanted to do with it. Crafted using low-pressure autoclaves, roller mill maceration, open-air fermentation with fibers in stainless steel, deep well water, and distilled in stainless steel stills with copper coils, this tequila was clearly made to let the agave shine.
The first thing that jumped out of the glass was a beautiful aromatic combination of sweet cooked agave and fresh raw agave. It’s like standing in an agave field during harvest while freshly cooked piñas are being unloaded nearby. As it opens up, aromas of green bell pepper, wet cement after a summer rain, fresh thyme, rosemary, green apple, and bright lime begin to emerge.
